Opopeo Amaranth

Amaranthus sp.

Gorgeous deep red spikes of flowers reaching 5ft - 6ft in height with greenish bronze leaves. Edible leaves are tender when young. Seeds can be cooked like a grain or ground into flour. Amaranth is native to Mexico and Central America where it has been cultivated for centuries, but this variety is developed for cooler climates.

Growing conditions: Amaranth needs full sun and loves the heat. It also prefers soil with low to average fertility and requires consistent moisture. Growth may slow in cooler weather but will increase rapidly in summer heat. 60-70 days to flower; 120-130 to harvest seed. Staking recommended.

Sowing instructions: Start 4 weeks before the last frost indoors. Direct sow when soil reaches at least 65F.

Stewardship chain: Grown out in Maine, then in Boxford, MA during a wet summer. Seeds selected by an experiential educator for ease of harvest and cleaning. Grown by Lillooet Farm in Boxford, MA.
